Crawfish Bread

my sister in laws husbands dad made this and it was amazing! there is a lot of components to it however way worth it!

ingredients:

1-10oz pkg frozen choppped spinach
3/4 cup chopped onion
loaf french bread
cup of mayo (you can use less or even none if prefer it that way, he didnt use any but this is what recipe calls for)
2 tbs butter
lb crawfish tails
3/4 cup chopped gr. onions
tsp pureed garlic
tsp chopped fresh parsley or to taste
tsp creole seasoning
1-8oz pkg cream cheese, softened
1/2 cup grated parm cheese
pepper jack cheese
paprika and parsley to taste for garnish

in a sauce pan put spinach and chopped onion then boil according to pkg spinach or until onions are soft. drain well set aside. cut bread in 1/2 place on sheet and spread w/ mayo set aside (remember you can omit this step if not using mayo). in skillet melt butter and saute crawfish, gr onions, garlic, parsley for about 5-8 mins. stir in creole seasoning and cream cheese. blend drained spinach mix with crawfish and spread evenly over bread. top with parm cheese, pepper jack cheese, paprika and parsley. bake 15 mins and then broil 2 mins or utnil heated through (dont leave in broiler unattended or may burn)
