Lasagna


Ingredients


1 pound of ground sausage
1 pound of ground beef
1/2 cup of chopped onions
2 cloves of garlic chopped
1 (28 ounce) can of crushed tomatoes
2 (8 ounce) cans of tomato sauce
2 (6 ounce) cans of tomato paste
2 tablespoons white sugar
2 teaspoons  Basil leaves chopped
4 tablespoons parsley chopped
1 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon ground pepper
23 ounces of ricotta cheese.
1/2 teaspoon nutmeg
1 egg
1 pound shredded mozzarella cheese
1 cup grated Parmesan cheese
12 lasagna noodles
–Serves 12 people–

Start with the following in a pot:
1 pound  ground sausage
1 pound  of ground beef
1/2 cup of chopped onions
2 cloves of garlic chopped

Brown the ground beef,  sausage, onions and garlic in a pot.


Next add the following:
1 (28 ounce)  can of crushed tomatoes
2 (8 ounce)  cans of tomato sauce
2 (6 ounce) ( cans of tomato paste


Gently stir this into the cooking meat.

Add the following:
2 tablespoons white sugar
2 teaspoons  Basil leaves chopped
2 tablespoons parsley chopped
1 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon  ground pepper

Gently stir these seasoning into the sauce.

Cover the pot and let the meat sauce simmer.  Simmer on low heat for 1 hour

Soak 12 lasagna noodles.
The lasagna noodles need to be soaked in hot tap water for 15 minutes.  (next time im gunna boil mine a few minutes first cuz they werent quite done enough for my liking)
While the noodles are soaking you can make the cheese filling.

Put the following in a mixing bowl:
23 ounces  of ricotta cheese.
1/2 teaspoon  nutmeg
Stir together.

Add the following:
1 egg
2 tablespoons parsley chopped
Mix these ingredients together with a spoon

Now start building the lasagna layers.
Use a 9×13 inch baking pan.
Spread 2 Cups  of meat sauce on the bottom of the pan.

Remove your lasagna noodles out of the water bath.  Shake water off wet noodles.
Lay 6 noodles across the layer of sauce.

Spread half of the ricotta cheese mixture over the layer of noodles.

Spread 1/2 of the mozzarella cheese over the ricotta layer.
Sprinkle half of the Parmesan cheese over the mozzarella layer

Spread 2 cups of meat sauce over the cheese layer
Lay down the next layer of noodles
Spread the remaining ricotta mixture over noodles
Spread the mozzarella and Parmesan cheeses saving  some cheese for the top of the lasagna
Put the last layer of meat sauce on the cheeses
Sprinkle the remaining cheese on top.

Cover with foil
Bake in preheated oven at 350 F for 25 minutes
Remove foil and bake uncovered for another 25 minutes.


Serve!

Easy Chicken Parmesan

6 tablespoons Grated Parmesan Cheese, divided
6 small boneless skinless chicken breasts
1 1/2 cups Mozzarella Shredded Cheese
Garlic powder,salt & pepper  to taste
  1. Heat oven to 375 degrees F.
  2. Pour sauce into baking dish. Stir in 1/4 cup Parmesan. Add chicken; turn to evenly coat both sides with sauce. Cover.
  3. Bake 30 minutes or until chicken is done (170 degrees F).
  4. Top with remaining cheeses; bake 5 minutes or until mozzarella is melted.
  5. serve w/ pasta if you like

Chicken Spaghetti

ingredients

-couple b/s chicken breasts:cooked and chopped
-can of rotel,undrainedl
-2 cans, of any combo,: cr of chicken, celery, mushroom, etc.
-a mini block or about 7 slices velveeta
-diced onion, celery.
...-spaghetti.

Cook spa. noodles. Cook chicken. While they are cooking saute veggies until tender. Add the 2 cans of the cr of whatever and Rotel tomoatoes and stir until blended. Add salt and pepper to taste. Add velveeta, stir until melted. Add chicken Drain noodles. If you are going to freeze some cooked them al dente. Dump the saucy stuff into the noodle and stir until blended. Add a splash of milk if too thick.

Breakfast Poppers

ingredients

ground sausage (however much you want)
8 oz cream cheese
crescent rolls

spray muffin pan. cook and drain sausage. add cream cheese to texture. put crescent rollsinto muffin tins. place mixture in rolls and bake according to crescent roll directions

Taco Salad

ok this one sounds REALLY weird howevr it is pretty good. a friend brought it for girls night and i liked it.

ingredients

lb meat
1/2 cup chopped bell pepper
taco seasoning
1cup grated cheese (more if wish)
onion (diced)
dorito chips
head of lettuce
3 tom diced (less if want)
french onion dressing

cook hamburger meat and drain. add taco seasoning. mix lettuce, tomatos, onions, bell peppers, and cheese in lg bowl. the combine remaining ingredients top with french onion dressing and toss.

Baked Chicken

this is a recipe a friend of mine just emailed me...this is her first time cooking it and she thought it sounded good so she shared it with me to share with everyone else!

Cut chicken pieces
1 med. onion
1/4 c. lemon juice
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. thyme
1/4 tsp. oregano
1/2 tsp. lemon pepper
1/4 tsp. basil, dried
1/4 tsp. salt (optional)

Slice onion very thin and place in bottom of casserole dish. Mix the spices together and sprinkle some on both sides. Pout lemon juice over the top of the seasoned chicken. Bake at 350 degrees for 1 hour or until golden brown. After 25 minutes, turn pieces over for remaining time.

I served with Parmesan noodles and green beans

Salsa Chicken

ok this recipe is simple and more about how many your cooking for than certain amts.

ingredients

boneless/skinless ck (however many you need to cook)
salsa (your choice to what kind, i usually use a big jar and a small one)

-pour half your salsa in crock pot
-put your ck in pot
-cover your chicken with rest of salsa
-cook for about 4 hours

i serve it over white or whole grain brown rice with some green beans as a side!
you could also cook it in a skillet if you dont have a crock pot...just brown your chicken then add salsa let simmer till bubbles then cover with lid turn down low till chicken is all the way cooked thru!

BLT Pizza

1pgk. bacon
1 pizza crust mix
1c. cheddar cheese
2/3c. mayo
2/3c. pizza sauce
1 tomato, small diced
1c. shredded lettuce

Cook bacon til crisp.Drain & crumble.
Prepare crust.
Spread mayo & sauce, add bacon,tomato & cheese.

Bake at 425* for 10-15min. top w/ lettuce

Chicken Pot Pie

Chicken Pot Pie

1 1/2 cup instant biscuit mix
1 cup milk
1 stick melted butter
1 can cream of chicken soup
Salt and pepper, optional
1/2 cup frozen green peas
1/2 cup thinly sliced carrots
2 hard-boiled eggs, sliced
2 cup chopped cooked chicken breast
1 cup chicken broth


Preheat oven to 350
In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas.

Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers.

Stir together the biscuit mix and milk, and pour this over the casserole.

Drizzle butter over the topping.

Bake until the topping is golden brown, 30 to 40 minutes

Goulash

Goulash

1lb ground hamburger meat
1can pork &beans
1 can whole kernal corn
2 can tomato sauce
chili powder,pepper,garlic to taste

Brown hamburger meat
add beans,corn and tomato sauce and mix well.
Add seasonings for taste.

Serve over bread,frito chips or just eat it by itself

My Husband's "Chicken Enchaladas"

My husband's "Chicken Enchaladas"

1 1/2c. cooked chicken
1/2c. chopped grean onions
1T. butter
4oz can diced green chiles
1can cream of mushroom soup
1/2c. sour cream
1c. shredded cheddar cheese
6 12inch flour tortillas
1/4c. milk
1t. garlic powder

Cook & dice chicken breast

In medium saucepan on med. heat, melt butter & salte green onions 3 or 4min till tender.

Stir in garlic powder,green chiles,mushroom soup & sour cream.

Set 3/4 of the mixture aside.

With other 1/4 add chicken & 1/2c. of cheddar & mix together.

Fill tortillas with chicken mixture, roll up and put in large greased baking dish seam side down.

With other 3/4 of mixture add milk & other 1/2c. cheese.

Spoon over tortillas. Sprinkle w/ a little extra cheese.

Bake at 350* for 20-25min. Makes 4 large enchaladas

Baked Spaghetti

Baked Spaghetti
1 lb browned and seasoned ground Beef (Italian sausage can be substituted)
3/4 lb.spaghetti, cooked
1 jar of your favorite pasta sauce
2 cups Mozzarella Cheese, grated

Preheat oven to 350 degrees.

In a large sauce pan, simmer meat and tomato sauce together. Toss the cooked noodles in the sauce.

To Assemble: Spray a casserole dish with non stick cooking spray.

Spoon half of the noodle mixture into the dish. Pack it down lightly and sprinkle on half of the cheese.

Add the other half of the spaghetti, pack down lightly and top with the rest of the cheese.

Bake at 350 for 15-20 minutes or until the cheese is bubbly

Creamy Tacos

Creamy Tacos

•1 lb. ground beef
•1 can Rotel
•1 pint whipping cream
•1 can chili beans (optional)
•1 large box velveeta
•fritos
Garlic,pepper to taste

Preparation:
In large pot brown ground beef and drain.

Add whipping cream ,rotel &beans, and stir.

Cut velveeta in chunks and let melt.

Stir well and let simmer 15-20min. Serve over fritos.

Shrimp and Pasta Alfredo

Shrimp & Pasta Alfredo

1lb peeled shrimp (or chicken)
1 bag bowtie pasta
1 pkg cream cheese
3T. butter
1 1/2c. shredded parmesan cheese
1c. romano cheese
2pints whipping cream
garlic and pepper to taste

In large pot put shrimp to boil w/ crab boil seasoning. Boil until shrimp are pink. Drain water and set aside

Bowl pasta until done. Pour over into shrimp and mix.
Alfredo Sauce-

In separate pot melt butter. Add whipping cream and cream cheese. Let melt.

Add cheeses and seasonings and let boil 1 min.

Pour over into shrimp & pasta and mix together and serve!

Mexican Lasagna

this is another recipe i got from a friend after receiving it after i had my little girl...sounds weird but it is good..and i have fixed it before this is also a recipe you can add or sub from!

ingredients

soft tortialla shells (however many you want and whatever size you want)
meat (about a lb is good)
taco seasoning
corn, drained (how much depends on how much corn you want)
black beans (optional)
shreded cheese (any kind you want and however much you want)
can diced tom (drained)
tortila chipa

-cook meat and drain
-in a baking dish layer...shells, corn, meat, cheese and so forth till your done and top with cheese...bake on 350 until cheese is melted and bubbly..as an aditional topper for some cruch add some tortila chips at end when melting cheese!

Chillie with NO beans

ok i use to hate chillie cause the way everyone i knew that made it always had the beans in it and well i just thought that that was how it was suppose to be...my sister in law gave me this recipe and it is good we had it last wkend!!!

chili-
hamburger meat
1 pkg chili seasoning mix
2 can tomato sauce
1 jar of tobasco chili sauce
little bit of chili powder
garlic powder...
let it simmer bout 20min then serve

Spinach Pizza

ok so this is SOOO simple and kids can help ya make it.

ingredients

frozen spinach cooked and drained
pizza kit from walmart (the cheese one)
shredded cheese

make pizza according to direction on box (it makes two rectangle pizzas or two circle ones)
add sauce
add spinach
add cheese
add anything else you want too
cook according to directions on pizza kit box

enjoy so simple and fun to make with kids AND cheap!

Cheesy spinach stuffed Chicken

this recipe is more of how much you wanna make instead of measurements...

ingredients
boneless/skinless ck breasts
frozed fresh spinach
moz. slices
moz. shredded ch (you can use a dif kind i just like moz.)
milk (you can also use 1/2 and 1/2 if you have that in hand)
butter (optional for more flavor)
salt/pepper/garlic powder/onion powder (to taste)

-butterfly ck breasts
-cook spinach and drain as much water out as possible
-in small pot put spinach as much cheese as you want, a splash of milk (enough to make it creamy) and butter if want a little more flavorful
-take one slice of moz. ch. slice and cut in half and put on top and bottom of open ck
-stuff ck with spinach mixture
-close ck (if have problems keeping it closed you can take some toothpicks that were soaked for a min in water thru ck to help it out)
-season ck with salt, pepper, onion powder, garlic powder to taste
-bake on 350 until ck is cooked all the way through probably around 30-45 min pending oven using and thickness of ck breasts.

you can also do this with pork chops (preferably boneless) however i like the chicken better!

Southern Chicken N Dumplins

Southern Chicken N Dumplins
little time consuming but well worth it!
(I make this in an 8 qt pot but can be easily adjusted)

Ingredients

2-3 spilt chicken breasts
family size cream of chicken, or 2 smaller ones
5 chicken boulion cubes
1 stick real butter
1/2 gal for enough milk to add to the pot, about 3 cups.
salt and pepper to taste

5 cups flour
2.5 teaspoons salt
6 tablespoons shortening
5 eggs


In a stock pot fill with 1/2 water and boil chicken until done seasoning with salt and pepper to taste.

Once done remove chicken and strain homemade broth. DO NOT DUMP THE BROTH! Return to pot and add the boulion cubes and cream of chicken. Once dissolved taste to make sure it is seasoned with salt enough. Bring to medium boil on high-medium heat.

While coming to a boil mix in seperate bowl flour and salt. Cut shortening into flour. Make a well add eggs. Slightly beat them in the well and then combine. It should be crumbly now. Add (with these amounts) about 2 ladles of the boiling broth. It will form a dough ball, don't add too much liquid though or it will be too sticky- go slow!

With broth mixture boiling, working with a handful of dough at a time roll (use lots of flour!) dough until it is 1/4" thin or as thin as you can get. The thinner the better. Cut into squares, strips, or just rip apart into dumplin size pieces and add the broth. Keep going until all is done, pushing dumplins down so they get cooked evenly. Add milk if it starts getting crowded with dumplins.

When done add milk to almost reach the top of pot, about 1 inch from the top. Add stick of butter and deboned chicken. Simmer on low-medium for another 1/2 hour or until dumplins are tender and stir frequently so they won't stick!!

-Feeds my family of 6 for two meals. Do not freeze though. Not very good after 3 days either, just my opinion. to reheat add a little extra liquid (milk or broth) If necessary.

Oh to adjust recipe, do the broth the same but use less boulion, and only one sm. can cream of chicken.

For dumplins the recipe for one batch is:
1 cup flour
1/2 teaspoon salt
1 tablespoon shortening
1 egg
enough liquid to make dough ball

(I make 5 batches for mine)

**I got this recipe today from a friend...it sounds great and im gonna fix it real soon!

2-EZ Chicken Broccoli Teriyaki

2-EZ Chicken Broccoli Teriyaki

Indgredients

2-3 boneless/skin less chicken breast, cooked and cubed
(SAVE time! Cook chicken when you have another meal using b/s chicken and cube and freeze or put in fridge up to 3 days)
Teriyaki sauce (kikkoman or other)
Steam fresh frozen broccoli
1 onion in slices/chunks

Cooked rice (I LOVE Jasmine)

Spray a fry pan or wok with no stick spray, or use a bit of olive oil, cook onion. Add thawed or cooked chicken.

In micro wave cook brocolli according to directions. Add to pan. Add pepper and tekiyaki sauce (just circle the pan about 3 times)

Stir up good, but don't break the brocolli into mush, and serve over rice.

Serves my family of 6. But you can always freeze the leftovers minus the rice IF YOU STARTED WITH RAW CHICKEN. Wha-lah!
